Welcome to Pizza Tasting Chronicles, my take on the pizza review. I eat a lot of pizza. I have a lot of opinions about pizza. There are many like it, but this one is mine.
There’s something about the way the shop looks that let’s you know right away this isn’t a neighborhood pizzeria, but rather a product of the modern chic Williamsburg. The white and green decor looks like a movie set, the aesthetic somewhere between vintage and luxury brand.
Owner Sean Feeney is a finance guy who’s involved with other neighborhood restaurants like Misi and Lilia, the impossible-to-get-tables-at spots from Miss Robbins. Chef Will Unseld met Feeney at Misi, and the two opened the Williamsburg spot in 2022. Since then a downtown Brooklyn and an Amagansett location have opened.
What Fini gets right about their pizza is the crust. Its thin and crisp, and adds a layer of flavor that is absent in less dough. They cook the pizza long enough to char the edges and bring a golden glow to everything.
The regular slice here is one of my favorites. It’s not quite the traditional New York Slice with greasy, thick layer of low moisture mozzarella cheese, but it’s good which is more than I can say for a lot of the other newer pizzerias in the area.
I’ve cycled through all their various slices, and they are well-composed flavor profiles. But if there is a standout slice her, is the long hot shallot. Its pepper and onions with a little spice to it, and shallots to provide sweetness. Pies topped with green peppers and onions are common, but Fini elevates this combination with the sweet and spicy combination.
Fini did help usher in the era of the gourmet slice, and the price point to match, and no doubt the other pizzerias in the area have taken their price point as a gauge on how much the market will bear when it comes to slices. The pizza is good, and for the most part worth the price.
I much prefer Fini over waiting on line down the street at L’industrie. As a splurge, its definitely a go-to. But a neighborhood joint shouldn’t be a splurge. It shouldn’t be priced to make me think about grabbing a slice on my way to the subway, or whether my four-year-old is just going to pick at half the slice before getting bored.
