I bought a dozen bagels, but since I can’t eat a dozen bagels, I had some left over. I had brought them from Brooklyn to my parents’ house on Cape Cod, and even with four adults eating them, we still had some left two days later. So I did what good bagel shops do and made bagel chips. I served them with some Boursin and honey-infused goat cheese.

Slice bagels into thin chips
Brush olive oil on the chips

Bake at 350 for 20 to 25 minutes or until crispy, rotating every few minutes
