Recipe: Tuscan-Style beans
A fast, cheap, easy side dish that's high in fiber.
Traveling across Tuscany, Cannellini beans populate every menu as a minor side dish. Their absolutely worth tasting, and a great way to fill out a meal. It’s also a simply recipe drawing from pantry staples. Cannellini beans are ideal, but as is the case here, I happened to have northern beans on hand. If you have seasonings in your spice rack, this side dish is an economical one that can be pulled together for just a few dollars — with the majority of that cost going into a fancy can of beans.
Pantry Tuscan-Style White Beans
INGREDIENTS
1 can of cannellini of great northern beans
A healthy splash of olive oil
Dash of onion powder
Dash of garlic poweder
Crushed black pepper
A tablespoon of truffle butter or a few drops of truffle oil
A tasteful amount of Parmesan cheese, freshly grated
INSTRUCTIONS
Drain and rinse the beans
Add to a ceramic baking dish
Splash in the oil, butter, other seasonings and grated cheese
Stir
Baked at 350F for about 20-30 minutes; top should be crusty, and most of the moisture evaporated
