A unique, heirloom turnip varietal grows in the sandy soils of Cape Cod. The Eastham Turnip is larger than supermarket turnips, and difficult to grow, but is celebrated each year with a turnip festival in mid-November. We sourced our turnips from Friends Marketplace in Orleans.
Ingredients
Eastham Turnip
1 Tablespoon of flour
1 egg
Salt
Olive Oil
Pinch of garlic poweder
Instructions
Shred the turnips and drain
Add a pinch of salt and let sit for a few minutes
Squeeze out excess moisture
Combine flour, egg, garlic powder, and splash of olive oil
Thoroughly mix together
Allow to sit for about 20 minutes
Heat oil in pan
Form turnip mixture into balls and flatten
Fry until golden brown
Serving Suggestions
Turnip latkes are a peppery substitute for potato latkes, serving as starchy side dish. Sour cream is a great topping, as is sriracha mayo.
